By popular demand, I'm going to start posting recipes every once in a while. The following is an adaptation of a fish recipe I found a few years ago, I've just tweaked things a little. I don't have a name for it...I tend to call it Yummy Chicken, but I don't want to steal Yummy Pumpkin Stuff's thunder!
1 pound of chicken tenders (or you can use whole breasts if you want, adjusting cooking time)
1 can of diced tomatoes with chiles
1 lime
cilantro
crumbly white Mexican cheese (I don't know the name of it)
Preheat oven to about 350. Put the raw chicken in the bottom of a casserole or 9x13 pan. Pour canned tomatoes over top. Squeeze the juice of half the lime over the top of tomatoes. Chop some cilantro finely and sprinkle over top (as much as you like). Thinly slice the other half of the lime and arrange on top. Bake for about 20 minutes, or until the chicken is just about done. Remove the lime slices (you can save for garnish if you're fancy), and sprinkle the crumbled cheese on top. Bake for another 10 minutes or until the chicken is done and cheese is melty.
The is one of those recipes that you can play with a little. If you like more tomatoes, throw in another can. If you don't like that kind of cheese, use another kind. You get the idea. Have fun with it. It's DELICIOUS!!!!!!!!!!!!!!!!!!!

I've been on a no-cooking kick for a while now, it usually happens in the summer for me, and I think this might actually bring me back! Thanks for the inspiration.
Mmmm! I saw that it was a fish recipe, so I almost didnt read it. But then I thought "I wonder if I could do it with chicken..." so I kept reading--And I'm so glad I did!!! I'd probably make it for dinner tonight, if I didnt already have dinner plans. Tomorrow night it is!
