I made some really yummy soup the other day and I thought I'd share the recipe. It's not exactly healthy, but it was GOOD. It's from Rachael Ray, only I changed a few things.
Leeky Creamy Chicken Soup
2 T olive oil
4 leeks (white and tender green parts only, split lengthwise and thinly sliced crosswise)
5 ribs celery thinly sliced
1 bay leaf
salt & pepper to taste
28 oz. low sodium chicken stock
1/2 C water
2 Cups heavy cream
1 pound chicken tenders cut into small chunks
1/3 C chopped flat leaf parsley
1 t. paprika
In a large soup pot, heat oil over medium heat. Add the leeks, celery, bay leaf, salt and pepper and cook until tender (about 10 minutes).
Add the chicken broth and water and bring to a boil. Add the chicken and cook until the chicken is cooked through and vegetables are to desired tenderness. Add the parsley, paprika and cream and cook about 10 more minutes.

That sounds delish. Or as, RR says, Yummo! (I want to punch her in the face everytime she talks. But her recipes are always pretty good.)
I'm always jealous of people who like to cook, and are good at it. I always print off the recipies I find...and then they sit in my purse or binder or car and I think about making something, and then I think that if I have a moment of time to spare I'd much rather spend it relaxing on the couch. and maybe a quick nap if I have the time.

I was reading along thinking that it sounded like a very healthy recipe and I was wondering what you were talking about until, there it was 2 cups of heavy cream. That should be at the top. The very best starter ingredient. I don't like soup, but I'm pretty sure I'd have some of that.
And why can't she just say olive oil like the rest of us? Does it really have to be EVOO?
