Ice Cream Sandwich Casserole

Yes, I said Ice Cream Sandwich Casserole!! It's actually a Paula Deen (sorry Wendy) recipe that I altered a tiny bit and renamed. Hers was just called Frozen Banana Split. Boring. Here's the original recipe and I'll tell you how I changed it.

24 ice cream sandwiches, unwrapped (obviously)
6 medium bananas, peeled and thinly sliced
1 12.25 oz jar hot fudge
1 10 ounce jar maraschino cherries, drained and chopped
1 8 oz package toffee bits
1 12.25 oz jar butterscotch ice cream topping
1 8 oz. container cool whip, thawed

Line a 13x9 pan with heavy duty aluminum foil

Place half of the sandwiches evenly over bottom of pan, completely covering bottom, cutting sandwiches to fit if necessary. Top evenly with banana slices. Pour hot fudge sauce over bananas. Top with cherries and half of the toffee bits. Pour butterscotch evenly over top. Layer with remaining sandwiches and spread cool whip over top. Sprinkle with remaining toffee bits.

Cover and freeze at least 4 hours....overnight preferable. Remove from pan using foil as handles. Cut into squares and serve.

I made a much smaller version since it was just for me and Mike. I used 8 sandwiches and layered it up in a loaf pan. I used 1 banana, but it could have had a little more. I used about half the jar of hot fudge and butterscotch and I used chopped nuts instead of toffee because I couldn't find the toffee. It was a tiny bit too squishy when we first ate it, so I would recommend freezing overnight. It was really good though! And I like my name for it much better than Paula's!

P.S. Sorry I've been a little out of touch lately with posts and comments. My mean, mean employer has taken away most of our personal internet usage (how rude!), which includes personal email and posting to blogs. I can still read them, but I can't comment or post. I'll try to do better when I get home, but I'm still reading all of your stories and laughing to myself!

My sister makes something like this, but I haven't ever tried it. I keep meaning to - maybe I'll save it for the middle of the long, hot summer (you remember how it is here - you need something to get you through it!).
