Recipe Day!

Here's a yummy one for you. Though it's in the cookbook I made several years ago for those of you who have one.

Lemon Bundt Cake

1 lemon cake mix
1 3.4 oz pkg. lemon instant pudding mix
3/4 vegetable oil
4 eggs
1 C. Sprite or Sierra Mist

Glaze:
2 C. powdered sugar
1/4 C. butter, melted
1/4 C. lemon juice

Preheat oven to 350. Grease and flour a 10 inch bundt pan.

In a large bowl, combine cake mix and pudding mix, then stir in oil. Beat in eggs one at a time, then stir in Sprite or Sierra Mist.

Pour batter into prepared pan. Bake for 35 minutes or until done.


Glaze:
Combine all ingredients until smooth.

Immediately after removing cake from oven, poke holes with long-tined fork. Pour 2/3 of glaze over top. Cool for 20 minutes and then turn cake out onto serving plate. Spread with remaining glaze.
