A Really Weird (but delicious) Casserole

I made a pork roast in the crock pot a couple weeks ago.  Of course, it makes WAY too much for just Mike & I, so I froze some of the cooked meat.  We found this recipe for Mu Shu Pork Casserole online to try and use some of the leftovers.  Normally, the criteria for what makes a good casserole is that it has something gooey and delicious (like 4 pounds of cheese), and this doesn't have any, so I wasn't so sure.  But it is GOOD!  Try it!!

Here are the changes I made:

First, I didn't use the pork chops, as I had the leftover roast.  Next, I cut the recipe in half but still used the full amount of mushrooms and the full amount of the pancacke batter.

I'm going to try this!

I'm always looking for new recipies that make me expand my horizons.

And, can I PLEASE be involved in the Casserollin' food truck franchise?!
