I made a pork roast in the crock pot a couple weeks ago. Of course, it makes WAY too much for just Mike & I, so I froze some of the cooked meat. We found this recipe for Mu Shu Pork Casserole online to try and use some of the leftovers. Normally, the criteria for what makes a good casserole is that it has something gooey and delicious (like 4 pounds of cheese), and this doesn't have any, so I wasn't so sure. But it is GOOD! Try it!!
Here are the changes I made:
First, I didn't use the pork chops, as I had the leftover roast. Next, I cut the recipe in half but still used the full amount of mushrooms and the full amount of the pancacke batter.
