Biscotti Blunder

I'm baking a few things this week for a bake sale at work that will benefit a local charity. I decided to try making biscotti. I don't normally like it because it's a little too crunchy for me, but I think for people that drink coffee, it's a nice accompaniment. Anyway, I tried a recipe for gingerbread biscotti because it sounded festive, plus I intend to dip half of it in white chocolate just for fun.

The recipe wasn't difficult, it's pretty basic actually, until it comes to forming the loaf-like shapes on the sheet pans. It's a very wet dough (wetter than cookie dough), so it was like smearing it into the right shape. The recipe said to make 4 "loaves" on 2 pans. I did that (after getting half of it all over my hands), and took them out to cool. After they cool, you cut them into slices and bake them again. Here's where my little blunder came in.

As I was mixing up the biscotti, I was working on another batch of caramels and had poured that liquid into the pan to cool. Then I took the biscotti pans out of the oven to cool before I could slice them. While I waited, I was watching TV. Several minutes later, I thought I smelled something burning, but I knew there wasn't anything in the oven, so just disregarded it. A couple minutes later, the burning smell was getting stronger. In an instant I realized what it was, jumped up and ran into the kitchen.

Yes, I left the burner on where I was making the caramels and set one of the biscotti pans right on top of it. So...two of the loaves could very easily be served as "Blackened Gingerbread Biscotti". Doesn't sound too tasty does it?

It could be the new craze -- blackened always makes things sound a little more interesting. Anyway, I'm glad you tried it.
