Here's the recipe some of you asked for. These are the cranberry bars I made for The Liz Jubilee on Saturday.
Cranberry Bars
1 C. dried cranberries (roughly chopped)
2 T. sugar
2 C. Flour
1/2 t. baking soda
2 C. dried oats
1/2 C. sugar
1/2 C. brown sugar
1 C. melted butter
1 C. dried dates (roughly chopped)
1/2 C. pecans (chopped)
1 1/2 C. caramel sauce
Preheat oven to 350 and grease a 9x13 pan
Mix together cranberries and sugar and set aside
In bowl, combine flour, soda, oats sugar and brown sugar. Add melted butter and mix until crumbly. Reserve 1 Cup of this mixture for the topping.
Press the flour-oats mixture into the bottom of the pan and bake at 350 for 15 minutes.
Sprinkle the cranberry-sugar mix, dates and pecans over the baked bottom. Pour the caramel sauce evenly over top. Take the 1 Cup of reserved topping and sprinkle over the filling. Bake for 20 minutes or until golden. Cool before cutting.
